JANE CRANDAL'S SPAGHETTI Chop 1 onion Coarsely. Start it frying on low heat with a couple of tablespoons of vegetable oil in a large pot. Stir every couple of minutes. Peel and crush then add 5 - 10 garlic cloves When onion is translucent, then add 1/2 cup chopped celery (optional) 4 cups chopped fresh tomatoes (optional) 1 cup chopped mushrooms (one small can) 2 tbsp. Italian seasoning 3 15-ounce cans tomato sauce When it reaches a simmer, reduce heat an let simmer for a half hour or until sauce is thickened. Adjust the seasoning (salt? pepper? paprika? a little sugar if it is too tart?) While the sauce is simmering, put a big pot full 1 gallon of cold water on high heat. When it comes to a boil, add 2 packages of pasta to the water. Cook pasta according to package directions and drain. Combine pasta and spaghetti sauce in a big bowl.
